My love of baking came from my grandmother. She was always baking something and this old fashioned banana cake was a regular in her kitchen repertoire. The hint of citrus makes it taste fresh and light.
Pre heat oven to 180C
Beat together:
125g butter and 2/3 cup caster sugar (1/2 cup if you like your cake less sweet)
Add and beat in:
- 2 eggs
- 2T freshly squeezed orange juice
- 2 overripe mashed bananas
- 1/2 tsp vanilla
- 1tsp orange zest
Stir in:
- 1 1/2 cups SR flour
Bake on 180C for 30 minutes or until lightly golden and cake springs back when touched.
Leave the cake to cool slightly in the tray before turning out onto a wire cooling rack to cool completely.
Cream cheese frosting
- 500g icing sugar sifted
- 125g unsalted butter (room temperature)
- 250g cream cheese
- 2 tsp vanilla
Beat the icing sugar, vanilla and butter together then add the cream cheese in one go and beat until it is light and fluffy.
